RAINBOW BIRTHDAY CAKE
- My Little Pony party cake

INGREDIENTS

Sponge cake: 2 eggs 2 dl sugar 2 dl flour 1 teaspoon baking powder ½ dl boiling water - 22-24 cm (9-9½ inch) round cake pan .	Between layers and on the top: ~ ½ dl milk or juice 4-5 dl heavy cream 1 tablespoon sugar vanilla essence or extract raspberry jam 1 banana
Cake decorating: coloured sweets sprinkles

DIRECTIONS:
Bake a sponge cake or use another cake recipe you like.
Sponge cake: Whisk together flour and baking powder in a bowl. In another bowl, beat eggs and sugar with an electric mixer until pale and thick. Add boiling water stirring constantly. Add the flour mixture. Mix until smooth. Pour batter into a buttered and floured cake pan. Bake for 20-30 minutes (oven preheated to 180 ° C / 350 ° F) until the cake is golden brown and begins to pull away from the sides of the pan. Let the cake cool completely.

Halve the cake horizontally with a long knife. Moisturize both layers with milk or juice. Beat whipping cream until soft peaks form. Decorate the cake with sweets shortly before serving as some sweets may colour the cream if the cake is left waiting too long.

Decorate sides with colored sprinkles. If you like, decorate the plate with marshmallows, cookies or meringues.
