Cake recipe:
4 eggs
1 ˝ dl sugar
1 dl flour
˝ dl potato starch flour
1 teaspoon baking powder
Between
layers:
250 g Mascarpone (cream cheese)
˝ dl pear juice concentrate
1 ˝ tablespoons sugar
2 sliced bananas

4 dl heavy cream
2 tablespoons sugar
vanilla essence
blue food colouring
chocolate block
filled liquorice tubes

- White icing for the name plate:
Mix a little icing sugar with a few drops of egg white till smooth.
DIRECTIONS:
Beat eggs and sugar with an electric mixer until
pale and thick. Whisk together flour, potato starch flour and baking
powder in a bowl and add to egg mixture. Mix until smooth. Pour batter
on baking paper on a pan to form a rectangle. Bake for 6-8
minutes (oven preheated to 200 ° C / 400 ° F). Sprinkle the cake with
sugar and turn out on another piece of baking paper. Let the cake cool
under a towel. Remove baking paper from bottom.
Trim
the sides of the cake with a knife. Halve the cake vertically. Mix
Mascarpone cheese with juice concentrate and sugar. Spread
over the other half and cover with banana slices. Put the top layer on
and press slightly. Cut two triangles out of the other end of the cake
and place them to the other end to form wings.
